Des Peres’ Circa STL is All About The Lou
ST. LOUIS, MO: (STLRestaurant.News) – Can you picture a restaurant with an “All About St. Louis” theme? Well come August, that’s exactly what you’ll see! Circa STL will be opening in Des Peres Square, the former location of the Zydeco Blues at 1090 Old Des Peres Road. The St. Louis-themed bar and grill will include “All that’s St. Louis” and “Route 66” themes, with a menu focused on St. Louis classics. Brian Walsh, his wife Sheila, and Cindy and George Degnan, the former owners of George’s on Clayton in Chesterfield, are taking the leap of faith together on this venture. All have prior restaurant experience in the restaurant business.
It all began as a hobby for Walsh as a teenager, collecting St. Louis memorabilia and over a 40 year span, he’s assembled quite an impressive compilation. Starting with sports memorabilia such as the Cardinals and Big Red, then the Flyers, Braves, Browns, followed by the Blues and Rams. From there, he set his attention on valuable and unique items like those from the old Gaslight Square, the St. Louis World’s Fair, and other companies that have been long forgotten.
Whether it’s an object from an 1890’s-era bar in Germantown, Illinois, or a relic obtained from the Lemp stables, you’ll find it all on the walls at Circa STL. And the “themed” part doesn’t end there. On the menu, expect traditional St. Louis favorites as well. Circa’s menu will include the original-recipe Luigi’s-style Pizza, over-sized Toasted Ravioli, and BBQ Burgers topped with cole slaw, a popular rendition of Ed’s White Front Bar-B-Que, the legendary 30’s north St. Louis establishment. And it wouldn’t be traditional St. Louis foods without Gooey Butter Cake.
Walsh also plans to stay true to the St. Louis theme with strictly local corporate and craft selection beers and a regional wine selection. Circa STL will be a fun opportunity to take a step back in time while enjoying some of St. Louis’ favorite foods.
