CHAMPAIGN, IL – July 26, 2026 (STL.News) Downtown Champaign is preparing for an evening of cultural immersion, community connection, and rich culinary traditions. Set for the patio at Martinelli’s Market, the upcoming “Afro Taste and Tell” event—part of the city’s vibrant “For The Culture” series—brings together local culinary powerhouses Stango Cuisine and Martinelli’s Market. Co-sponsored alongside community partners like The Beat on Market Street, this gathering invites residents to experience the vibrant sounds, stories, and flavors of Southern and Central Africa right in the heart of Illinois from 6 pm to 8 pm with FREE parking.

At the center of the celebration is an exploration of heritage through food. By pairing authentic African comfort dishes from Stango Cuisine with specialty European-style pastries and desserts from Martinelli’s Market, the collaboration highlights how food serves as a universal language for storytelling and community building.

A Taste of Tradition: The Culinary Roots of Stango Cuisine

To truly appreciate an event like “Afro Taste and Tell,” it helps to understand the depth and history of the foods being showcased. Stango Cuisine is widely celebrated in the Champaign-Urbana area for introducing locals to authentic Zambian and broader African culinary traditions.

Nshima: The Heart of the Meal

No discussion of Zambian cuisine is complete without Nshima (often grouped with similar staple porridges across the African continent like pap or ugali). Made from finely ground white maize meal cooked with water to a thick, dough-like consistency, nshima is much more than a side dish—it is the foundational anchor of the meal. Traditionally eaten by hand, a small portion is rolled into a ball, indented with the thumb, and used to scoop up savory stews, beans, and greens. It represents comfort, sustenance, and the communal nature of dining.

Rich, Slow-Simmered Stews and Proteins

At Stango Cuisine, nshima and rice are traditionally served alongside deeply savory, slow-cooked meats that showcase complex spice profiles without relying on excessive heat:

  • Beef Stew & Goat Meat: Tender cubes of beef or bone-in goat meat are marinated in proprietary blends of seasonings and simmered for hours until they melt in the mouth. Goat meat, in particular, is a prized protein across many African cultures, valued for its rich, earthy flavor profile.
  • Oxtail: A fan favorite, slow-braised oxtails are cooked until the meat falls off the bone, yielding a thick, gelatinous, and deeply comforting gravy that marries perfectly with starch.
  • Stango Gizdodo: A delightful fusion of textures, this dish pairs savory, spiced chicken gizzards with sweet, fried ripe plantains (dodo), creating a dynamic balance of savory, spicy, and sweet notes.

Vibrant Sides and Street Foods

  • Plantains: Naturally sweet, ripe plantains are sliced and fried until caramelized and golden brown, offering a tropical sweetness that contrasts brilliantly with savory stews.
  • Zambian-Style Beans and Greens: Dried pinto beans cooked from scratch with aromatic herbs, alongside nutrient-dense seasonal greens, round out the traditional plates with earthy, wholesome goodness.
  • Samosas and Pies: Reminiscent of cross-cultural trade and historical influences, flaky pastry shells stuffed with seasoned ground beef, chicken, or vegetables serve as popular handheld appetizers.

Sweet Intersections: Martinelli’s Market Partnership

While Stango Cuisine brings the robust, savory warmth of African home cooking, Martinelli’s Market bridges worlds by contributing an array of artisan bakery favorites. Known as a downtown staple for specialty groceries, fresh breads, and deli classics, Martinelli’s is curating a sweet counterpoint for the evening. Attendees can expect a decadent selection of cakes, cheesecakes, tarts, and pastries that highlight the collaborative, cross-cultural spirit of the kitchen sharing.

More Than Just a Meal

Food is only one dimension of “Afro Taste and Tell.” The evening is structured as an interactive cultural celebration. Alongside live African music and storytelling meant to transport attendees across the globe, the event features a lively Afro Contest. Guests are encouraged to wear bold cultural attire, vibrant colors, and their favorite natural afro hairstyles to celebrate creativity and self-expression. The creator of the best-decorated afro takes home bragging rights and a feature on the City of Champaign’s official social media channels.

By blending the aromatic spices of Zambia with the vibrant downtown energy of Champaign, the collaboration between Stango Cuisine and Martinelli’s Market offers more than a dinner date—it provides an immersive window into global cultures, right in our own backyard.
