Art That Should Be Eaten – Rick Jordan Chocolatier

CHESTERFIELD, MO: (STLRestaurant.News) – Tis the season when all things turn to chocolate!  What?  Too soon?  It’s not even Thanksgiving, you say?  Nonsense!  Why would you deprive yourself and your loved ones of the beautiful delicacies crafted by master chocolatier Rick Jordan just because it’s still fall?  Jordan’s artisan confections are made in small batches from cacao beans roasted and hand ground in his shop at 14882 Clayton Road in Chesterfield, which is aptly named Rick Jordan Chocolatier.  That’s where this artisan makes his signature chocolate blend and his beautiful, glossy chocolates.  But Jordan didn’t set out to be a candy-man, or even an artist.  Lucky us that he found his calling.

Rick Jordan studied business and computer science, even earning a degree from the University of Missouri.  But he soon realized that a desk job wasn’t for him.  So he went to culinary school.  After graduating from L’Ecole Culinaire in Ladue and studying at the French Pastry School in Chicago, he became the pastry chef at Villa Farotto’s in Chesterfield.  Jordan went on to study with chocolate makers in Tuscany and eventually became the first American apprentice at chocolatier Patrick Roger’s shop in the Paris suburb of Sceaux.

When he opened his chocolate boutique in Chesterfield in 2011, Rich Jordan promised it wouldn’t be anything like you’d find at a chocolate shop at the mall.  He’s a man of his word. The chocolates Rick Jordan crafts are 100% natural and preservative free.  That’s because he controls the process from roasting and grinding the cacao beans to developing the bold and inventive flavor combinations. Jordan designs and creates both edible chocolates and chocolate sculptures.  His are unique artisan chocolates unlike any others.

All of that study and dedication to craft are why Rick Jordan is the only chocolatier in St. Louis to be named a Top 10 Chocolatier in North America by the industry magazine Dessert Professional—an honor he earned less than two years after opening his Chesterfield boutique.  Are Jordan’s creations a bit pricier than mass produced chocolates?  Yep.  But better chocolate, like most premium items, comes at a slightly higher cost.  Worth.  Every.  Penny.

It’s not enough for Jordan to create flawless jeweled confections, or even to develop his own special flavor by roasting his own cacao and blending his own chocolate.  Jordan says he’s also growing cacao indoors right here in St. Louis.  His passion comes through when he talks about the art and science of making chocolate.

And new things are on the horizon at RJ Chocolatier.  Jordan is now using 3-D printing to create new molds that he says will open a whole new dimension to the creative process of chocolate making.

Rick Jordan Chocolatier is open Monday – Friday from 11:00 a.m. to 7:00 p.m. and Saturday noon – 7:00 p.m.  They’re closed on Sunday, but you can also shop online!  So whether you want a chocolate bar laced with ghost peppers or Missouri pecans, salted or ginger honey caramels, sipping chocolate, delicate truffles or his glamorous, hand-crafted, glistening chocolates, RJ Chocolatier has you covered…or would that be enrobed?  Either way, they’ll be a welcome addition to your table—Thanksgiving, and beyond.
