ST. LOUIS, MO: (STLRestaurant.News) – Whether he intended on building a restaurant Dynasty all along, only Restaurateur, Dave Bailey knows, but that’s exactly what he’s done. With popular restaurants like Baileys’ Chocolate Bar, Bridge Tap House & Wine Bar, Range and Rooster, is it any wonder that he continues to turn out successes. With a knack for staying ahead of food trends, and the sharp instincts about what concepts will catch on with diners, he began turning out his line of trendy restaurants in 2004. He now employs more than 300 people serving more than 500,000 customers each year. Bailey is currently in negotiations on a plan to build a burger bar in the Shaw neighborhood. The spot, a former gas station at the corner of Klemm Street and Shaw Boulevard will be a small-scale version of Bailey’s Range, his popular downtown burger bar. There will be a walk-up window, outdoor seating and a kids menu, all designed specifically, to appeal to the growing number of young professionals and families moving to the area. His prior venture, Shift, which is “a take-out-only test kitchen,” with a rotating selection of menu items in a carryout format is doing great. Bailey also continues to expand his strip of Locust Street downtown with a new event space this summer, called Slate. It will open at 1015 Locust St., and is meant to complement his other recently opened event space Willow at 321 N. 10th St. So, stay tuned… with his successful track record, there’s sure to be more to come!
